Sweet Potato and Carrot Juice & Salad


I love sweet potato juice. If you have never tried to juice a sweet potato I highly recommend it. David Wolfe says, "It tastes like strawberry quick." It is sweet and tastes pretty much the same as the great taste of cooked sweet potato, but with more nutritional value intact. I usually juice it alone, this time I decided to juice it with some carrots.

Sweet potatoes are rich Vitamin A (betacarotene) and it is a good source of Vitamin C. Both are powerful antioxidants that work to remove free radicals. Free radicals are chemicals that damage the bodies cells.




















It was a busy day, so a quick salad was all I had time for. I added for a change Upland Cress which is the dark green herb you see in the photograph. It has a spicy, peppery taste, reminiscent of watercress, but a bit more pungent. It is rich in Vitamin A, C, Iron and Calcium.

This is mixed with lettuce, organic button mushrooms and some dehydrated red pepper.

Fast and Yummy!

  3. I was a bit hesitant at first, but it is really good! I have not tried a combination of sweet potato and grapes yet, apparently it is really good!
