Sweet potatoes are rich Vitamin A (betacarotene) and it is a good source of Vitamin C. Both are powerful antioxidants that work to remove free radicals. Free radicals are chemicals that damage the bodies cells.
It was a busy day, so a quick salad was all I had time for. I added for a change Upland Cress which is the dark green herb you see in the photograph. It has a spicy, peppery taste, reminiscent of watercress, but a bit more pungent. It is rich in Vitamin A, C, Iron and Calcium.
This is mixed with lettuce, organic button mushrooms and some dehydrated red pepper.

I was a bit hesitant at first, but it is really good! I have not tried a combination of sweet potato and grapes yet, apparently it is really good!
